Key Lime Cupcakes with White Chocolate Frosting

Yesterday was my sister’s birthday and I made these heavenly Cupcakes

This is a new recipe that I developed myself. It’s a Key Lime Cupcake with White Chocolate Frosting.

Cupcakes 18 medium ones:

  • 300 g of unsalted butter, room temperature
  • 4-5 eggs
  • 450 g of plain flour
  • 350-400 g of caster sugar
  • 0,75 dl of milk
  • Zest and juice from 5 Limes

Key Lime Filling:

  • 400 g of condensed milk
  • 5 eggyolk
  • Zest and juice from 5 limes

Frosting:

  • 300 g of unsalted butter, room temperature
  • 300 g of philadelphia cheese (or cream cheese) room temperature
  • Icing sugar (I’ve not put an amount because it’s very subjective, pour some in and taste it, just remember the white chocolate is very sweet)
  • 300 g of White chocolate

How to make them:

  1. Turn the oven to 225 degrees celsius
  2. Mix the butter and the sugar
  3. Add the eggs during mixing, one at the time.
  4. Mix the flour and baking powder in a seperate bowl
  5. Add the flour and bakingpowder mixture, and lime zest + juice, slowly during mixing
  6. Add the milk

Filling:

  1. Mix all the ingredients

Cupcakes continue:

  1. Put a Cupcake mold into a muffintray and pipe the cupcakemixture into half of the mold (it rises alot in the oven)
  2. Put then in for 8 minutes.
  3. Take them out and pipe in the filling.
  4. Put them in for another 8 minutes.
  5. Let them cool before adding the frosting!

Frosting:

  1. Mix the butter with some icing sugar
  2. Add the cheese and mix them togheter.
  3. Put it in the fridge.
  4. Melt the chocolate over a waterbath
  5. Mix it into the frosting.
  6. Pipe it onto the cool cupcakes
