Christmas and CANDY

A very merry christmas. Today is the 24th and Christmas Eve which means that in Sweden we celebrate christmas today.

I made some christmas candy, butterscotch and light rocky road, here’s the recipe:

BUTTERSCOTCH

100 g of butter

3 dl of caster sugar

1 dl of light syrup

2 dl of cream

1 tablespoon of vanilla sugar

How to make them:

  1. Melt the butter in a saucepan.
  2. Add the rest of the ingredients and mix.
  3. Let the mixture boil and use a thermometer to decide the temperature. 
  4. When it has reached 125 degrees celsius or 257 degrees fahrenheit, remove it from the heat and pour it into a tray with greaseproof paper, 30×20 cm.
  5. Let it set before you cut it in pieces.

TIP: use the greaseproof paper to make some wrapping paper for the butterscotches.
LIGHT ROCKY ROAD

400 g of milk chocolate

2 dl of salted peanuts

2 dl of dumle (if you have it, otherwise use some butterscotch or toffee)

1 dl of small marshmallows

1 dl of jelly raspberrys

How to make them:

  1. Fill a tray with greaseproof paper
  2. Mix all the ingredients EXCEPT the chocolate, and put the mix into the tray.
  3. Melt the chocolate over a waterbath.
  4. Pour the chocolate over the mixture and mix it all togheter.
  5. Put it in the fridge and let it set for 2 hours.
  6. Break it into pieces and serve.
